This flow sheet shows a part of the chocolate manufacturing process. After cacao mass is finely ground to become vita-chocolate in a continuous attritor, the fat, powdered milk and powdered sugar are added to it. This material is then metered and put into a FM Mixer to mix it uniformly and lecithin is added.
This is ground into a particle size that is soft and pleasant on the tongue, and refined in an MQ attritor. Then, after homogenization of its internal structure and improvement of its luster and appearance, it is transferred to the next cooling stage.
This plant offers the following advantages for existing chocolate manufacturing plants. The process flow can be eliminated, operation can be automated and running costs can be reduced. |
